  • Chicken thighs (or drumsticks) – 8 ~ 3lbs
  • Water – 1 cup

For Homemade BBQ Sauce:

  • Brown sugar – 1 1/2 cups
  • Ketchup (with no sugar preferred) – 1 1/2 cups
  • Red wine vinegar – 1/2 cup
  • Water – 1/2 cup
  • Liquid smoke – 1 tablespoon
  • Worcestershire sauce – 1 tablespoon
  • Dry mustard powder – 2 tablespoons
  • Smoked paprika – 1 tablespoon
  • Garlic powder – 1 tablespoon
  • Salt – 2 teaspoons
  • Black pepper – 1 teaspoon
  • Hot pepper sauce (or more) – 1 tablespoon

How To Make BBQ Chicken Thigh

  1. Add all the ingredients for bbq sauce in a food processor and process the mixture until it becomes smooth and well combined.
  2. Divide the sauce mixture into two and place them in different bowls.
  3. To one of the sauce bowl, add a cup of water and stir thoroughly to combine well.
  4. Transfer the mixture to your instant pot.
  5. Add the chicken to the sauce.
  6. Close the lid and seal valve.
  7. Cook at high pressure for 8 minutes.
  8. Once done, natural pressure release for 10 minutes.
  9. Then release the remaining pressure manually.
  10. Now, preheat your oven to broil.
  11. Line the baking sheet to be used with aluminum foil.
  12. Transfer the cooked chicken onto the sheet.
  13. Then use the remaining bbq sauce from the other bowl to cover the chicken.
  14. Broil the chicken until it becomes crispy.
  15. Then serve with more bbq sauce and use chopped green onions to garnish it.
