The traditional Filipino can be quite hard work. Why not try this instant recipe that gives you a simplified method but still delicious.

Ingredients
- Veg. oil – 2 tablespoons
- Soy sauce – 1/3 cup
- Ground sugar – 1/4 cup
- Minced garlic cloves – 6
- Large onion (diced) – 1
- Diced scallions – 2
- Salt and powdered black pepper
- Chicken legs – 4
- Vinegar – 1/4 cup
- Bay leaves – 2
Method
- Set the Instant Pot to Saute sitting and add vegetable oil
- Spray generously onto the chicken, salt and black pepper, then add into the simmering oil
- Allow the chicken to brown on both sides
- Turn the Instant Pot to normal setting and add sugar, onion, bay leaves, garlic, vinegar, soy sauce and pepper
- Set the Instant Pot to high pressure and cook for 8 minutes
- After, 8 minutes, turn the instant Pot to high saute setting and cook for 20 minutes.
- Discard the bay leaves and serve the Chicken with scallions and rice
