Strawberry Coffee Cake

So yummy and tasty that you can’t afford to miss. This is so easy to prepare and good for morning coffee. You don’t know what you want to make for breakfast? Try this and you will definitely do it again. But check your clock before you start, because you need like 1 hour and 30 minutes to do this one.

Ingredients

  • Packed brown sugar – 1 cup
  • All-purpose flour – 2/3 cup 
  • Cinnamon (ground) – 1 teaspoon
  • Butter – 1/2 cup 
  • All-purpose flour – 2 cups
  • Baking powder – 2 teaspoons
  • Salt – 1/2 teaspoon
  • Butter – 1/2 cup
  • White sugar – 1 cup
  • Egg – 1
  • Vanilla extract – 1 teaspoon
  • Milk – 1/2 cup
  • Fresh blueberries – 1 cup
  • Confectioners’ sugar (used for dusting) – 1/4 cup

Method

  1. Heat the oven to be used to 175oC. 
  2. Thoroughly use cooking spray to coat a Bundt pan 
  3. First prepare the streusel topping as directed in the next step.
  4. For streusel topping, mix 2/3 cup flour, 1 brown cup sugar, and cinnamon in a bowl. 
  5. Add 1/2 cup butter and set aside. Note: the mixture is crumbly.
  6. Now let’s do the cake
  7. Beat 1/2 cup of butter in a bowl until it turns creamy.
  8. Then add 1 cup of the white sugar, and also beat until it now turns fluffy. 
  9. Beat in vanilla and egg. 
  10. Whisk the baking powder, 2 cups flour and salt together, and then add alternately to the creamed mixture with the milk. Note: Beat thoroughly after each addition.
  11. Put (spread) half of the batter into the prepared pan and cover it with berries.
  12. Add the remaining batter by fraction of tablespoons. 
  13. Cover it with streusel topping after adding the whole batter.
  14. Finally bake in oven for about 60 minute at 175oC until it turns deep golden brown. 
  15. Then remove the pan to a wire rack to cool down. 
  16. Once it’s cooled down, turn it onto a plate, and dust with the confectioners’ sugar, and you’re done.
