Easy Spinach Avocado Dip With Mexican Salsa Recipe (Raw Vegan Avocado Dip)

Ingredients for Spinach Avocado Dip

For Spinach Avocado Dip:

  • Fresh spinach leaves (blanched in boiling water for 2 minutes, squeezed, drained) – 1/2 cup ~ 20 large leaves
  • Large ripe avocado (mashed) – 2
  • Garlic (crushed) – 1 clove
  • Fresh coriander (chopped) – 1/4 cup
  • Dairy free coconut yogurt – 3/4 cup
  • Lime juice – 1 tablespoon
  • Extra Virgin Avocado Oil (or any other healthy vegetable oil) – 4 tablespoons
  • Sea salt – 1/2 teaspoon

For Mexican Salsa:

  • Cherry tomatoes – 10
  • Canned red kidney beans – 1/4 cup
  • Chopped fresh coriander – A handful
  • Extra Virgin Avocado Oil – 2 tablespoon
  • Lime juice – 1 tablespoon
  • Small garlic – 1 clove
  • Brown Rice Chips – 1 packet

 

How to make Spinach Avocado Dip

  1. Add the avocados, garlic, spinach, coriander, lime juice, yogurt, salt, 3 tablespoons of avocado oil, and pepper to your food processor and pulse till mixture becomes smooth.
  2. Transfer the mixture to a bowl and drizzle 1 tablespoon of avocado oil over it.
  3. Put the mixture in your refrigerator and refrigerate for about 30 minutes.
  4. Then add the Mexican salsa and serve.

 

How to make the Mexican Salsa

  1. Add the tomatoes, red beans, garlic, lime juice, and avocado oil in a mixing bowl.
  2. Stir mixture thoroughly to combine well.
  3. Then sprinkle the salsa on the dip.
  4. You can add extra coriander (optional)
  5. Serve with the brown rice chips.
