Ingredients

  • 14- ounce can of diced tomatoes – 1
  • Garlic – 5-6 cloves
  • Minced ginger – 1-2 teaspoons
  • Turmeric – 1 teaspoon
  • Cayenne pepper – 1/2 teaspoons
  • Paprika – 1 teaspoon
  • Salt – 1 teaspoon
  • Garam masala – 1 teaspoon
  • Ground cumin – 1 teaspoon
  • Boneless and skinless chicken thighs – 1 pound

To finish:

  • Butter (cut into cubes, for dairy free use coconut oil) – 4 ounces
  • Heavy cream (for dairy free use full-fat coconut milk) – 4 ounces
  • Garam masala – 1 teaspoon
  • Chopped cilantro – 1/4-1/2 cup

How to make Indian Butter Chicken Recipe in Instant Pot

  1. Add the diced tomatoes, garlic, ginger, turmeric, cayenne pepper, paprika, salt, garam masala, and cumin.
  2. Stir thoroughly to mix well.
  3. Add the chicken thighs to the pot.
  4. Close the lid and set to high pressure for 10 minutes.
  5. Once done, allow the pressure to release naturally for 10 minutes.
  6. Remove the lid and bring out the chicken from the pot. Set the chicken aside.
  7. With your immersion blender, blend the sauce mixture thoroughly.
  8. Allow it to cool a little bit, and then add the butter, cilantro, cream and garam masala, and stir thoroughly.
  9. Scoop out half of the sauce, and preserve it in your refrigerator.
