  • Thick cut bacon (diced) – 4 slices

For The Chicken Breast:

For Cream Cheese, with Ranch Seasoning:

  • Cream cheese (kept at room temperature) – 8 ounces
  • Garlic powder – 1/2 teaspoon
  • Onion powder – 1/2 teaspoon
  • Dried dill weed – 1/2 teaspoon
  • Dried chives – 1/2 teaspoon
  • Salt
  • Fresh ground pepper
  • Low sodium chicken broth – 1 cup

For Topping:

  • Fresh parsley (chopped)
  • Green scallions (sliced)

How to make Instant Pot Keto Crack Chicken Recipe With Ranch Seasoning

  1. Set your instant pot to ‘Sauté’ and allow it to heat up.
  2. Add in the bacon (diced) and let it cook for about 1-2 minutes.
  3. Remove from your instant pot at desired crispness.
  4. Add the olive oil and heat it up.
  5. Season the chicken with garlic powder, paprika, pepper and salt.
  6. Add the chicken breast to the heated oil and cook for about 4 minutes till both sides turn brown. Remember to flip halfway.
  7. Meanwhile, put the cream cheese in a bowl, seasoned with onion powder, garlic powder, dill weed, chives, pepper and salt. Mix thoroughly.
  8. Stop the sautéing by pressing ‘Cancel’ on your instant pot.
  9. Then add the cream cheese mixture.
  10. Add in the chicken broth.
  11. Set the instant pot on ‘Manual High Pressure’ and allow for 12 minutes.
  12. Quick release and remove the lid.
  13. Transfer the chicken to your cutting board and shred.
  14. Stir the chicken (now shredded) back into the pot.
  15. Place back the lid and allow it to stand (powered off) for about 5 minutes. This thickens the sauce.
  16. Garnish with the toppings and serve.
