Instant Pot Chicken Adobo

The traditional Filipino can be quite hard work. Why not try this instant recipe that gives you a simplified method but still delicious.

Ingredients

  • Veg. oil – 2 tablespoons
  • Soy sauce – 1/3 cup
  • Ground sugar – 1/4 cup
  • Minced garlic cloves – 6
  • Large onion (diced) – 1
  • Diced scallions – 2
  • Salt and powdered black pepper
  • Chicken legs – 4
  • Vinegar – 1/4 cup
  • Bay leaves – 2

Method

  1. Set the Instant Pot to Saute sitting and add vegetable oil
  2. Spray generously onto the chicken, salt and black pepper, then add into the simmering oil
  3. Allow the chicken to brown on both sides
  4. Turn the Instant Pot to normal setting and add sugar, onion, bay leaves, garlic, vinegar, soy sauce and pepper
  5. Set the Instant Pot to high pressure and cook for 8 minutes
  6. After, 8 minutes, turn the instant Pot to high saute setting and cook for 20 minutes.
  7. Discard the bay leaves and serve the Chicken with scallions and rice
